This is my favorite pasta salad of all times, so easy to make and delicious! (4 persons)

Pasta sauce
5 tomatoes
1 big or 2 small red onions
1 deciliter olive oil
1 table spoon white vinegar
1-2 garlic clove
1 red chili
Salt, white pepper

Pasta salad “filling”
3 dl 100% whole grain pasta
Rocket salad
Parmesan cheese
Salami of your choice
Pine nuts

Make small dices of the tomatoes, put them in a pot. Pour the olive oil and white vinegar over it and have medium heat on the stove plate. Chop the onions, chili and garlic into small pieces and add to the pot, use salt and pepper after your taste. Put down the heat on the stove plate to low and let it boil for about 15 minutes.

In meantime boil the pasta, don’t over cook it. Also edge the pine nuts in a frying pan, don’t use oil or butter in the pan. Make small pieces of the parmesan cheese, how much you want to use is up to you. It is ok if the pasta is just warmish and then pour your tomato blend on your pasta. Add rocket salad and mix it together. Make small rolls off the salami and lay them in a nice pattern over your pasta salad. Sprinkle the pine nuts and parmesan cheese on top of everything, enjoy this healthy pasta salad!
